Black rice amazake is made using sun-dried non-glutinous rice and black rice grown in Hino, Tokyo, using natural cultivation methods without the use of pesticides or fertilizers, and Marukawa Miso's "natural koji mold." Naturally grown rice koji is saccharified using the power of koji, and then blended with naturally grown black rice. Unlike amazake made with sake lees, this is non-alcoholic and sugar-free. It can be enjoyed by people who don't like alcohol, as well as by babies and the elderly. It is also recommended as baby food for children.
