Naturally grown black rice small rice cakes / TANBO NO WA

This luxurious white unbaked mochi is made from sun-dried black rice grown in Hino, Tokyo, using natural farming methods without the use of pesticides or fertilizers, and then milled into a wooden mallet. It is bite-sized and easy to eat, making it a great snack or breakfast. Grill both sides over low heat until the mochi puffs up, and then serve simply with soy sauce. You can also have it as azuki zenzai or sprinkle with soybean flour. The creamy and smooth texture is created by pounding the mochi rice twice after thoroughly soaking it in cold water.
